Veal scallopini with cremini mushrooms and Marsala Wine

- 4 veal cutlets (scallopini)

- 4 tbsp olive oil

-2 garlic cloves

-3 fresh rosemary springs

-1cup of vegetable broth

-1large yellow onion

- 8oz of cremini mushroom

-1/2 cup of heavy cream

- 1 cup of low sodium vegetable broth

-1cup of all-purpose flour

-1cup of Marsala wine

- 2tbsp of butter


In a heated skillet add 2 tbsp of olive oil and 2 tbsp of butter, garlic, and chopped onion cook it for 3 minutes. In the meantime coat the veal scallopini with flour, and cook it in a skillet, cook it for 3 -4 minutes then transfer it to a plate. After the onion turned golden add the sliced mushrooms simmer it for 4 minutes add salt pepper and vegetable broth, simmer for another 2 minutes. Add the Marsala Wine, veal scallopini, and rosemary. Simmer it until it is reduced by half and add the 1/2 cup of heavy cream and 1/2 tbsp of all-purpose flour and simmer it for another 2 minutes.
