ingredients:
-1 bag of Spring Mix Salad
-3 white mushroom(small)
-1 bulb of fennel
-10 cherry tomatoes
- a small bunch of scallions
-1/2 cup of toasted walnuts
-1/2 cup of raisins
-2 Granny Smith apples
-1/3 cup of Parmigiano romano

Dressing:
-2 limes
-2 lemons
-fresh chopped rosemary
-fresh thyme
-1/4 olive oil
First prepare the dressing by squeezing the lemons, limes, olive oil, chopped thyme and rosemary, salt, pepper, and place all ingredients in a blender for a minute.
Let it cool in the refrigerator for 15 minutes. Pour it over the vegetables, sprinkle some Parmigiano Romano, and some toasted tuscan bread chunks instead of croutons.
