Maple glazed salmon fillet with peas puree.

-2 Wild caught salmon fillets

-2 tbsp of brown sugar

-2 tbs of maple syrup

-1/2 salt

-1ziploc bag

-1tbsp of sweet paprika

-1/4 red onion

-1 handful of mixed , red and white cabbage and shredded carrots,green lettuce,frisbee,radachhio


-4 tbsp olive oil

-1/2 cup of heavy cream

-10 oz(284g) of english peas(fresh or frozen) i used fresh

-2tbsp of tarragon

-2 mint springs

-1 garlic glove

-2(dry ) tbsp basil


Place the following ingredients into the ziplock plastic bag: 2tbsp of olive oil, 1/2 salt ,2tbsp of paprika 2 tbsp of brown sugar and the 2 tbsp of maple syrup and add the salmon filets and let it sit in the refrigerator for 2 hours.In the mean time , prepare the peas puree by adding boiled water over ,for 10 minutes then place it in water with ice. Place the peas in the blender add salt, minced garlic,basil, 2tbsp of olive oil,1/2 cup of heavy cream, tarragon and chopped mint leaves . Now let’s cook the salmon. Heat a large non-stick pan over medium heat and add 2 Tbsp olive oil sear the salmon .Sprinkle the salad with lime. Serving suggestion just like in the photo bellow.
