-4 mandarins

- 2 cups of lettuce

-1 cup of shredded red cabbage

-1 cup of shredded white cabbage

-1 /2 cup of shredded carrots

- pickled ginger

-Asian style crunchy noodles

- 2 large grilled chicken breast

-1/2 roasted almonds

Dressing:

-1 tablespoon of sesame seeds

-2tablespoons of honey

-salt

-2 tablespoons of sesame oil

-2 tablespoon of low sodium soy sauce

-1 teaspoon of orange zest

-2 tablespoons of rice vinegar

-1/2 cup of mandarins juice

-1 teaspoon of freshly grated ginger

-1 clove of minced garlic.

How to prepare the dressing:

In a wooden bowl pour the sesame oil add sesame seeds, salt, the juice from (2 mandarins), honey, rice vinegar, orange zest, soy sauce, minced garlic, grated ginger mix all the ingredients for 1 minute then place the bowl in the refrigerator for another 15 minutes.

Salad:

In a different salad bowl add the lettuce, shredded red cabbage, shredded white cabbage, shredded carrots, sliced mandarins, pickled ginger, sesame seeds, and the crunchy noodles. Drizzle the dressing and sprinkle roasted almonds on top and the grilled chicken strips The salad is very refreshing and easy to make.
