-15 peeled pearl onion.
- 10 baby dutch potatoes cut in two.
-2 large carrots, sliced.
-1 cornish hen.
- 3 cups of chicken broth.
- 2cups of water.
-1 cup of traditional egg noodles.
- 2 tablespoons of organic olive oil (extra light) used for cooking.
In a medium-size stockpot, simmer the onion, carrots, and baby dutch potatoes cut into small pieces the cornish hen.
Stir for 10 minutes and add the chicken broth, water, salt, and pepper.
After 50 minutes add the egg noodles and let it boil for another 10 minutes. At this point, the soup should be ready. Garnish with fresh chopped parsley.
Serving suggestion: toasted bread
