Exquisite homemade dish!!!!!!!!

Homemade Celery root creme soup with, Argentinian Red Shrimp’’

Ingredients:

- 1 large celery root

- 2 celery ribs

-3 tablespoons light olive oil for cooking (Bertolli)

-2 cloves of garlic

-2 shallots

-6 branches of dry thyme

-salt and pepper

-6 springs of (dry)thyme

-1tablespoon of nutmeg

-1 coconut cream can(Trader Joe’s organic coconut cream) 13.5 Fl oz.

- 32 Fl oz vegetable broth (Trader Joe’s organic vegetable broth)

-1 cup of water.

- 8 large, Argentinian Red Shrimp, peeled and deveined

-1 lemon

-salt and pepper

-2tbsp salted butter

- chopped parsley

-1 clove of garlic (minced)

In a stockpot add 3 tablespoons of olive oil, add the celery root, shallots, celery ribs peeled and cubed, garlic, saute all together, till turn golden. Add chicken broth and water, salt pepper, thyme. Let it simmer till all vegetables soften. Remove the thyme branches place vegetables in a food processor along with the broth and puree it. Place it back in the stockpot add nutmeg, coconut cream and let it simmer for another 10 minutes.

Preparing the Argentinian Red Shrimp.’’

I recommend using fresh shrimp peeled and deveined. Melt the butter, add shrimp, salt, pepper, minced garlic, and lemon juice. Let it cook for about 4 minutes then add the chopped parsley.
